Emerald Coconut Apple Crisp Image2


• 5-6 medium-sized Granny Smith apples, peeled and cut into 1/4 inch slices

• Shredded or flaked dried coconut, sweetened optional, to taste

• 1 1/2 cups brown sugar

• 1 1/2 cups oats flour

•  1 cup rolled oats

• 1 scoop (1 full serving) Chia Seeds

1 1/2 teaspoons ground cinnamon

1 1/2 teaspoons ground nutmeg

2/3 to 1 cup Emerald Labs Certified Organic Coconut Oil (at soft butter consistency)


1. Heat oven to 375°F.

2. Toss apples and shredded coconut together and arrange in a greased 13 x 9 x 2 inch baking pan.

3. Mix all dry ingredients, then add in coconut oil until a crumbly consistency is achieved.

4. Pack 1/2 of the crumble topping around the apples.

5. Sprinkle the remaining 1/2 of crumble topping over the apples. Top with dried coconut. Bake for30 minutes or until golden brown on top.

6. For an added treat, serve warm with a scoop of vanilla ice cream on top!

4 tablespoons Emerald Labs Certified Organic Coconut Oil

1 cup brown rice

2-3 garlic cloves, sliced thinly

2 cups hot water

3 crowns of broccoli

1 1/2 cups Sharp Cheddar cheese, grated

1 cup Monterey Jack cheese, grated

1 (12 oz) can evaporated milk

2 tablespoons yellow onion, finely diced

1/2 teaspoon salt

1/4 teaspoon fresh ground pepper


1. Preheat oven to 400°F.

2. Fill a large saucepan with water and bring to a boil.

3. In separate saucepan, sauté sliced garlic and brown rice in Emerald Labs Certified Organic Coconut Oil until golden brown.  Add 2 cups hot water, cover and simmer on low 12-15 minutes until water is absorbed.

4. Blanch broccoli in large saucepan of boiling water for 3-4 minutes, then drain and chop into small pieces 3/4 to 1 inch in size.

5. Set aside 1/2 cup cheddar. Mix all other ingredients into cooked rice mixture and transfer to coconut oil greased 8 x 8 x 2 inch pan. Top with remaining cheddar.

6. Bake 20 minutes or until cheese is golden brown.

• 2 lbs chicken tenderloins

• 1 cup coconut milk

• 1 cup rice flour

• 1 teaspoon salt

1 tablespoon paprika

• 1/4 teaspoon baking powder

• 2 teaspoons parsley flakes Emerald Labs Certified Organic Coconut Oil for frying


1. Place chicken in a dish with coconut milk and refrigerate for 2 to 2 1/2 hours. Drain the chicken and pat dry with paper towel before frying.

2. Combine the dry mixture in a bag. Shake chicken strips in the bag until fully coated. For double coating, place remaining mixture on a plate and set aside.

3. Heat oil in a skillet. Fry chicken strips until browned on all sides. For double coating, pull pieces out of skillet with a fork, roll in dry mixture then return to skillet to brown again.

4. Cover and simmer, occasionally turning until juices of chicken run clear. Remove from skillet and rest on paper towels to absorb any excess oil.

1/4 cup red wine vinegar

1 teaspoon honey

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 cup Emerald Labs Certified Organic Coconut Oil (liquified)

1/4 cup virgin olive oil

5-6 cups shredded cabbage and shredded carrot

1 scoop (1 full serving) Chia Seeds

1/8 cup raw sun flower seeds


1. Whisk vinegar, honey, salt and pepper until salt dissolves. Slowly whisk in oils.

2. In lightly oiled pan, lightly salt and toast sun ower seeds.

3. Toss all together right before serving.

• 1/3 – 1/2 cup Emerald Labs Certified Organic Coconut Oil

• 1 scoop (1 full serving) Chia Seeds

1/3 cup maple syrup (or honey)

2 teaspoons pure vanilla extract

4 cups rolled oats

3 teaspoons cinnamon

1 teaspoon pumpkin pie spice, optional


1. Preheat oven to 375°F.

2. In a 9 x 13 baking dish, mix rolled oats, cinnamon, chia, spices, nuts and coconut.

3. In small saucepan, heat the coconut oil until just liquid.

4. Remove from heat mix in syrup (or honey) and vanilla extract.

5. Pour over the oat mixture and stir to coat evenly.

6. Bake for 20-30 minutes, stirring occasionally.

7. After removing granola from the oven, add optional dried fruit.
